Welcome on board! Sewing up and picking up stitches are my least favourite things too, but usually you just have to get on with it. From that point of view, a baby blanket is ideal, so long as you chose a pattern that doesn't need you to pick up hundreds of stitches around the edge! I'm doing one at the moment that has a garter stitch border knitted in with the rest of the pattern, so I have no picking up to do, and, apart from sewing in the ends of yarn, no sewing either. Bliss!
